Three criteria above all
The dish determines the colour and character of the wine: sparkling or a dry white for aperitifs and fish, a fruity red for charcuterie and grilled meats, a more structured red for game and slow-cooked dishes. The occasion determines the style: an easy-drinking wine for a large gathering, a more crafted cuvée for a dinner. Finally, the budget decides between two wines that would both suit.
A Fronton red when in doubt
Négrette, the main grape of the Fronton PDO, gives fruity reds with aromas of violet and red fruit, and few tannins. They go with a wide variety of dishes, from a summer barbecue to a cheese board, and are happily drunk young.
