2 bottles of Chardonnay

Cuvée 100% chardonnayThis unique expression reveals a successful combination of grape variety and terroir. Château Saint Louis.
Harmony results from a balance between an engaging, highly expressive nose and a pleasantly round palate.
The grapes are pressed and then settled at low temperature.
Maceration takes place on fine spreads.
Vinification lasts around three weeks under temperature control, and ends with malolactic fermentation.

30ha Organic Farming Age of vines: 35 years on average.
Terroir
Boulbène and sandy silt on the surface and clay at depth.

100% Chardonnay
Winemaking
Pneumatic press pressing, settling at 6°C after 24 hours. Maceration on fine lees for 4 days. Low-temperature vinification (below 18°C) controlled by a cold water exchanger at 6°C. 80% of the blend was vinified and aged for 4 months in French oak barrels. The remainder was vinified and aged in concrete tanks.
Tasting
Pleasant, engaging nose evoking white-fleshed fruit and pear, with hints of quince and fresh hazelnut. A racy finish combining notes of hazelnut and spice with good persistence.
Wine and food pairing
Crépinettes of lamb with Chavignol crottin, brochettes of monkfish with smoked bacon.

2 bottles of " Bubble loan

This vintage with fine bubblesThis supple, fruity wine is made exclusively from Chardonnay using the traditional Champagne method. To guarantee a low alcohol content, we harvest the grapes early.
The 1st fermentation takes place in vats at low temperature to preserve the natural aromas. The 2nd fermentation takes place in closed bottles.
After several months in the cellar, disgorging and final corking are carried out.

2 bottles Spirit

L'Spirit of Saint-Louis is a highly expressive, structured and charming cuvée made from grapes from our oldest plots.
The blend comprises 85% of Négrette and 15% of Cabernet Franc.
Classic vinification, starting with a long maceration and followed by 2 or 3 delestages, lasts 3 to 4 weeks.
Each grape variety is vinified separately with temperature control.
Finally, 100% is aged in oak barrels for 12 to 24 months, giving it great ageing potential.

80% Pinot Saint Georges (Négrette), 10% Cabernet Franc 10% Malbec
Winemaking
Vinification is classic, with a long maceration and two or three delestages. The wine is aged at 100 % in oak barrels for 12 to 24 months.
Tasting
The selection of old vines produces quality grapes. Cabernet Franc brings elegance and finesse to the powerful fruit of Negrette. The result is seductive, based on a balance between aromatic expression, tannic structure and freshness. A beautiful palette of black fruits, very spicy, and the chic of ripe Cabernet underlined by sober ageing that leaves the wine fluid and crisp.

Beef fillet en croûte, or roast woodcock with chanterelles.
