This wine is a blend of 50% of Pinot Saint Georgesand 50 % of Gamay. A fresh vintage thanks to the method of direct pressing and selection of first press juices. The settling is carried out at 6°C and the fermentation at less than 18°C for about ten days. Natural sourdough selected. A minimum sulfites were added throughout the winemaking process. Dominant floral (rose and violet) blended with notes of fresh fruit apricot. Mouth tangy and refreshing.

Age of vines: 35 years on average.

Boulbène and sandy silt on the surface and clay at depth.

Winemaking

Rosé from direct pressing The must is settled at 6°C and fermented at less than 18°C for ten days. Selected natural yeast Minimal addition of sulfites throughout the winemaking process.

Tasting

Dominantly exotic fruits, expressive apricot, passion fruit. Supple, fruity palate supported by good acidity for freshness.

Wine and food pairing

Aperitif, mixed salad, tapas, tapenade, guacamole.
