L'Spirit of Saint-Louis is a highly expressive, structured and charming cuvée made from grapes from our oldest plots.
The assembly consists of 85% of Négrette and 15% of Cabernet Franc.
Visit classic vinificationstarting with a long maceration and followed by 2 or 3 delestages, lasts 3 to 4 weeks.
Each grape variety is vinified separately with temperature control.
Finally, breeding is carried out at 100% in oak barrels for 12 to 24 months, giving it great ageing potential.
Vineyard Vineyard: 30ha in Organic Agriculture. Age of vines: 35 years on average.
Terroir Boulbène and sandy silt on the surface and clay at depth.
Grape varieties : 80% Pinot Saint Georges (Négrette), 10% Cabernet Franc, 10% Malbec.
Winemaking Classic vinification, with long maceration and two or three delestages. The wine is aged at 100 % in oak barrels for 12 to 24 months.
Tasting The selection of old vines produces quality grapes. Cabernet Franc brings elegance and finesse to the powerful fruit of Negrette. The result is seductive, based on a balance between aromatic expression, tannic structure and freshness. A beautiful palette of black fruits, very spicy, and the chic of ripe Cabernet underlined by sober ageing that leaves the wine fluid and crisp.
Wine and food pairing Filet of beef in a crust, or roast woodcock with chanterelles.

This unique wine is only produced in exceptional vintages. The cuvée is made from a blend of 50% of Negrette and 50% Cabernet Franc. This wine for laying down is characterized by its finesse, elegance and minerality.
The grapes, meticulously harvested by hand, come from the estate's oldest plots, dating back to 1965 for the Négrette and 1977 for the Cabernet Franc.
After destemming, the grapes are crushed and vatted with very little sulfite, but enough natural yeast to complete fermentation without deviation. Vinification lasts about 3 weeks, and after several rackings, the wine is aged in barrels for 12 to 14 months.

Tasting A captivatingly complex aromatic palette: peony enhances black fruits (blackcurrant and blackberry), on a lightly woody background. Its full-bodied aromas (fruity vanilla) are underlined by a framework of well-melted tannins.
Wine and food pairing Goes well with hearty dishes, red meats and cheeses. Can also be served as an aperitif with black Bigorre ham. Beef filet en croûte or roast woodcock with chanterelles.
