Extreme

Produced exclusively for exceptional vintages, " Extreme "is an assembly of 50% Négrette and 50% Cabernet Francreflecting finesse, elegance and minerality. From historical plots (Négrette from 1965 and Cabernet Franc from 1977), the grapes are hand-picked with particular care. Vinification, which lasts 3 weeks and is aged in barrels for 12 to 14 months, is carried out with a minimum of sulfite and natural yeast, guaranteeing the authenticity of the terroir. Our vineyard of 30 hectares practice a organic farmingwith vines of an average age of 35 years, and a rich terroir of boulbène, sandy loam and clay. Tasting reveals a unique aromatic complexity, combining notes of peony, black fruit and light oak, complemented by well-melted tannins. Ideal with rich dishes, red meats and cheeses, and as an aperitif.

Bubble loan

" Bubble loan" a refined and sparkling cuvée, is made from 100% Chardonnayaccording to the méthode traditionnelle champenoise. Early harvesting ensures low alcohol content. Vinification takes place in two phases, first in vats at low temperature, then in bottles for the second fermentation, to preserve the finesse of the aromas. After a period in the cellar, the wine is disgorged and finally sealed. Our vineyards in 30 hectares at organic farmingwith vines averaging 25 years of age, offers an ideal terroir, enriched by boulbène, sandy loam and clay. The cuvée boasts a fresh, engaging nose of white peach and pear, enhanced by citrus notes, and a fresh, well-balanced palate. Perfect for aperitifs, desserts and festive occasions.

Chardonnay

Our " Chardonnay "is a pure expression of this grape variety, perfectly adapted to our terroir of Château Saint Louis. It is characterized by a harmonious balance between an expressive nose and a round, pleasant palate. After delicate pressing and low-temperature settling, the wine undergoes maceration on fine lees and temperature-controlled fermentation. Approximately 80% of the blend matures in French oak barrels for 4 months, the remainder in concrete tanks. Tasting reveals a seductive nose of white fruit, pear and hints of hazelnut, with a lingering finish of spicy notes. Ideal with lamb crépinettes with Chavignol crottin or monkfish brochettes with smoked bacon. This cuvée was awarded a gold medal at the Lyon international competition in 2022.
