30ha farmed organically, with vines averaging 35 years old.

Boulbène soil and sandy loam on the surface, supported by clay at depth.

Winemaking
Careful pneumatic pressing, followed by settling at 6°C after 24 hours. Maceration on fine lees for 4 days. Temperature-controlled vinification, with a significant proportion of the blend aged in French oak barrels for 4 months, and the remainder in concrete vats.
Tasting
A rich, welcoming nose, revealing aromas of white-fleshed fruit, pear, complemented by hints of quince and fresh hazelnut. An elegant finish combining notes of hazelnut and spice, with notable persistence.
Wine and food pairing
Ideal with lamb crépinettes with Chavignol crottin or monkfish brochettes with smoked bacon.

L'Spirit of Saint-LouisThis top-flight cuvée is made from carefully selected grapes from our oldest plots. Composed of 85% of Négrette and 15% of Cabernet Franc, it undergoes a classic vinification process, beginning with a long maceration and followed by meticulous delestage, for final ageing in oak barrels for 12 to 24 months, giving it excellent ageing potential.

A mixture of Boulbène and sandy silt on the surface, on a clay base.

80% Pinot Saint Georges (Négrette), 10% Cabernet Franc, 10% Malbec
