This wine is made from a precise blend of two grape varieties emblematic 50 % de Pinot Saint Georges and 50 % of Gamay. The Pinot Saint Georges brings structure and finesse, while the Gamay offers fruity aromas and vivacity.
This cuvée is distinguished by its exceptional freshnessobtained using a direct pressingto gently extract the first press juicerich in aroma and purity. The settlinga crucial process for clarifying the must, is carried out at a controlled temperature of 6°CThis ensures optimum removal of suspended particles.
Visit fermentationan essential step in the vinificationtakes place at temperatures below 18°C for about ten days. This precise temperature control promotes slow, even fermentation, preserving the delicate aromas and producing a well-balanced wine. The natural leavencarefully selected, plays a key role in stimulating harmonious fermentation and enriching the wine's aromatic profile.
Throughout the winemaking process, a minimum of sulfites is added. Visit sulfitesAlthough often necessary for wine preservation, they are used sparingly to ensure the purity and authenticity of the final product.
